this was my dinner last night and it was tasty and it really made me wish that it was cold here already. today: hot, overcast, and humid
i keep painting my nails dark colors and wearing long sleeve shirts hoping that the weather will cool down if i dress for it
annnnnd that is exactly how little i have to say - i’m literally talking about the weather. but i’m also in class learning about Franklin and his virtues
white wine sangria w. apple and mint … & my new apartment
i got back to dallas about a week ago and my apartment is finally starting to resemble a suitable living environment. most exciting find for me: a 3-piece coffee table set off craigslist from pottery barn - all white, wood, and exactly what i was looking for, mainly because it will look good in pictures
and now that my roommate and i have a dining table, couch, AND coffee table, we find it necessary to entertain every night of the week. Friday night we opted for a refreshing white sangria that pretty much tasted like spa in a glass — and, of course, the first recipe i am posting after getting my own kitchen is a drink that requires zero cooking
but basically i was just in love with how the green and white drink looked in my green and white themed apartment (ignore the blue and white pillows in the background - they will be replace shortly)

Healthy Apple Cinnamon Granola Bars
this is what i do on my days off of work, i just can’t help myself
i made this yesterday along with the orange-teriyaki tofu as part of my little challenge for myself to cook using only ingredients from the cafeteria. but i ended up using shredded coconut (and cinnamon) that i had leftover from one of my batches of granola.
these turned out to be absolutely delicious and the coconut is a must!
ingredients:
1. Slice the apple and bake slices at 350 for about 20-ish minutes

2. Remove from the oven and place in pan on medium heat, add milk. Cook for a couple minutes.

3. Add cinnamon and coconut, bring up the heat and try to evaporate some of the milk off. (stir constantly and watch out not to burn anything!)

4. Enjoy! (yes, it’s that easy)

this can be made easily in a dorm room - quick to make and portable for when you’re literally running out the door
i used a microwave but it’s not a necessity
*i like to have these on hand - they’re also great in oatmeal and as a snack by themselves
crunchy, sweet, and totally addictive. this healthier option will hopefully satisfy your sweet tooth this holiday season
[preheat oven to 225]
1. thinly slice a crispy apple with a mandolin, apple slicer, or slice it yourself with a knife

2. lay apple slices on a cookie sheet lined with parchment paper. if you want, sprinkle with cinnamon and/or sugar

3. bake for about 2 hours, turning over the apple slices halfway through. then take out the slices and let cool - letting them cool is what makes them crisp up
my friend and i did some grocery shopping in attempt to save money on food..
note to travelers: Belgium has amazing apples. other places probably do too…
but these were beautiful and red and juicy and crispy and tasted like halloween :)
