As of yesterday, nearly every single one of my friends has graduated and/or moved away for the summer, leaving me with just my car, my apartment, and lots of magazines. This past week I’ve eaten at home a total of 3 times, and those 3 Lean Cuisines were delicious. My friends and I have eaten out for breakfast lunch and dinner basically since finals week ended… May.. 15? So starting with my boyfriend’s birthday on the 15 until now we’ve eaten our way through Dallas feasting on Benedicts, Beers, Burgers…  Salads, Sandwiches, Sangria… are you getting the idea? (As in, my shorts are feeling a litttttttle tighter).

One of my best friends corrected me yesterday when I invited her to come to the farmers market with me today and told me the real place to go is Central Market. DEAR GOD, it’s like Whole Foods on steroids. I entered with a shopping list of literally five items… and left with like 15 (I really am on a budget, this was me splurging I swear).

The main reason I went was for the produce - gathering up items to make a strawberry balsamic salad similar to the one I had eaten at the Common Table: Peppered Strawberry Balsamic Salad.


My version turned out pretty passably (B+ ish)


Slivered almonds, 2 fresh strawberries, 2 cups spring mix lettuce, balsamic vinaigrette, 1 oz peppered goat cheese


Toasted a small handful of almonds in a pan over medium heat, checking and stirring constantly to avoid burning. They’re done when lightly browned and aromatic; Slice the strawberries; Toss the lettuce with dressing in a bowl; Plate greens and top with sliced strawberries, toasted almonds, and the goat cheese.


Blueberry Oatmeal w. Slivered Almonds


    • 1/2 cup dry oatmeal
    • 1 cup water
    • 1/4 cup blueberries
    • 1 tsp agave nectar
    • 1 tsp butter
    • 1 tsp truvia
    • 1 tsp brown sugar
    • 1/2 cup sweetened vanilla almond milk

Bring water to a boil and add oatmeal. Cook on medium heat for about 5 minutes.

In a pan, heat butter. Add blueberries and agave nectar. Keep on low heat and stir occasionally. After 2 minutes, turn off or keep on very low heat and cover.

In an oven-safe bowl, add oatmeal, and blueberries. Mix together brown sugar, truvia, and almonds, and sprinkle on top of oatmeal. Pour 1/4 cup almond milk into bowl and bake at 350 for ten minutes.

Remove and pour rest of the milk over the oatmeal. Sprinkle with more truvia if desired.

Dessert For Breakfast - Banana Nut Oatmeal

i ate this this morning, new favorite. i’m going to eat this every morning!

  • Quaker [Low Sugar] Maple and Brown Sugar Instant Oatmeal
  • 1/4 cup Vanilla Soy Milk 
  • 1/2 Banana cut into slices
  • 1 tbsp Slivered Almonds
  • 1 tbsp Sweetened Shredded Coconut
  • light drizzle of Honey 

i’m going to get into bed early tonight just so i can wake up early tomorrow morning and eat this again :)

dorm room food station

i got a microwave yesterday! big deal considering its now probably the most expensive thing i own…

so instead of finishing my philosophy journal (that i have yet to start) i spent last night setting up my food station a stocking it with goodies 

[not mentioned: instant oatmeal, chai tea bags, honey, old fashioned oats, espresso beans, and cuties]

i had an open-faced tuna sandwich with the zucchini fries on the side

… my favorite little addition to tuna salad: a few roughly chopped almonds
