so i FINALLY got my In n’ Out fix. staying true to a pescatarian diet, i got a grilled cheese - just as tasty, just as satisfying :)
and instead of buying 400 calorie fries, i made sweet potato fries using a different recipe than last time (i liked these better)
1) cut up 1 large peeled sweet potato into about 4-inch strips about 1/3 of an inch thick
2) microwaved them in microwavable-safe bowl for about 1:30 and then let rest for a couple minutes on a cutting board
3) in a large bowl mixed two egg whites, salt, pepper, paprika, cinnamon (spices to taste — about 1/4 - 1/2 tsp each)
4) tossed sweet potatoes in mixture until evenly coated
5) baked them on cookie sheet covered in parchment paper for about 20-30 minutes
(i check my every five minutes or so and use a spatula to turn them over and spread them out before putting them back in)
